My menu for this week – 7 Easy Suppers for a family of 4 or 5
I don’t know about you but meal planning and food shopping are my stress triggers..usually ending in lots of wine drinking!
I try and cook from scratch, sometimes I do and sometimes I literally cannot be bothered so I try and have something in the cupboard or freezer for such occasions.
I try and plan for the week and shop on a Sunday and I always, always pick easy to cook recipes!!
Here’s what’s on this weeks list.
Day 1. Indian lentil-cauliflower soup
From Angela Liddon’s Oh She Glows book, this is a healthy, vegan Indian Lentil-Cauliflower Soup recipe. Lentils and cauliflower are budget-friendly and perfect with the warming Indian spices.
Day 2. HelloFresh Super Green Stir-Fry (v) with Roasted Broccoli, Ginger Peanut Dressing
This super green stir-fry is the perfect quick-fix recipe if you’re craving something fresh and flavourful. Crunchy green vegetables like beans and broccoli pick up all the flavours in the peanutty sauce, whilst fresh herbs and lime juice keep things fresh. Wholesome, hearty and packed with nourishing ingredients, make this your dinnertime go-to.

Day 3. Veggie Shepherds Pie
This pie features a filling of colourful veggies and meaty mushrooms crowned with creamy mash. It’s warm and comforting, the perfect antidote to a chilly winter evening!

Day 4. Spaghetti Puttanesca
I got my recipe from Jamies 30 minute meals but I don’t bother with the ciabatta or the chocolate pudding – just straight to the pasta part of the recipe.
Its super quick and sooo tasty.

Day 5. Prawn Green Thai Curry
Prawn Thai Curry with Rice in just 20 minutes for a balanced and tasty meal.

Day.6 Rainbow Pepper Fajitas with Refried Beans and Citrus Sour Cream
Super easy to make and my children really like this recipe.

Day. 7 Giraffe Malay Vegetable Curry
From the frozen aisle in Tesco – I serve with microwavable brown basmati rice and naan bread
I tend to use the HelloFresh website (and app) when it comes to planning my recipes. Then top up with ideas from Pinterest, cookbooks at home and some recipes online.
If I have managed to save you the grief of sitting down to plan a food menu then I’m so pleased.
One thing that comes up when I’m talking with friends about food and their children is the hassle of trying to get them to eat a variety of different food.
My advice (with older girls that eat pretty much anything that is put in front of them) is to never ever give up. Put it down in front of them as the only option for supper. They can pick at it and they can take their time to eat it and if they are hungry enough they will eventually start to eat it!
They are relying on you to expand their taste buds so that when they grow up they aren’t annoying picky eaters!
